as a chef i would believe boiled water would be considered distilled as long as you let it cool down to room temperature you are boiling all there minerals out
i was thinking the same but distilled water is pretty cheap, and that way your not taking any chances.

Distilled water is obtained through a process of collecting steam in a pot then forcing it upwards through a tube. Then it is allowed to filter back down through thousands of small ceramic beads back into the pot. This collected water is then forced back up and out of a tube into a waiting receptacle. The result is water that is devoid of bactiera, mineral deposits and chlorine.
It's the exact same thing as distilling whiskey or other alcoholic spirits. As a matter of fact a "still" or distillery for distilling water is the same as one used for making whiskey.
The more you circulate a product through the distiller the purer it becomes. Be it water or some other liquid.
