starting to do some like to know about different layouts for the ears and for back of necks

Layouts are only limited by your imagination, and skill in custom bending the jewelry and your piercing skill. I have done industrials in the ear from almost every point, anything is possible with sufficient forethought and planning. The most common industrial is straight from helical ridge to another point on the helix, but as I said, there really is little limit to what can be done.
Piercings on the back of the neck are called 'nape' piercings and are surface piercings and completely different in approach from an industrial. Surface piercings are done with surface barbells, specifically designed for that use.
